We are Ahito Bistro, a restaurant that celebrates Colombian popular gastronomy by honoring the culinary traditions of grandmothers, mothers, and homes from every region of Colombia.

He grew up in Muzo, Boyacá, where he learned the basics of traditional Colombian cuisine from his mother, knowledge that today inspires a familiar, honest, and deeply popular approach.

His work with the land and biodiversity has been recognized nationally and internationally through lists such as The Best Chef Awards and The World’s 50 Best Restaurants, establishing him as one of the most relevant voices in contemporary Colombian gastronomy.
